Being complementary in the organisation of the domaination, we share the tasks between us.
Impassioned by the vine growers work, Gilles is in charge of the vineyards with for objective to respect the heritage and philosophy transmitted through generations.
So we work with moderate production methods with the onus on limiting vine intervention to allow the authenticity of the soil to express itself naturally and fully. We use environmental friendly techniques; fertilization according to soil analysis, phytosanitary treatments only after observations in the vineyard, for example.
Our Grand Cru and 1er Cru parcels as well as a part of our Chablis parcels are worked without insecticide or acaricide, but with biological environmental friendly means (sexual inhibitors, introduction of thyphlodromes, for example).

We still use a little weed killer, but selectively and at reduced doses.
The excellent position of our parcels allows at the same time proficient maturity and early harvests.
Nathalie takes care of essentially the winery. In 2004 we built our own vat house, in order to vinify all the grapes coming from our domain.
This cellar is composed of small thermo-regulated stainless steel tanks (from 20 to 50 HL), in order to vinify each parcel separately.
Chablis wines and Chablis 1er Cru Fourchaume are only vinified in tanks, whereas Chablis Grand Cru Les Preuses and Chablis 1ers Crus Vaulorent and Mont de Milieu are vinified, in part, tanks and in part, barrels.
We use the simplest methods possible, in order to let the minerality and the complexity of our different terroirs imprint the personalities themselves.
